I didn't realize that the kingfish is a prized sashimi-grade fish in Japan (where it is farmed). We tried some raw with wasabi, ginger, and soy sauce and it was incredible! That fish seriously does not taste like fish. It's like tuna in that way.
Shore diving near Napier over the three-day weekend, Mac happened upon a school of kingfish, known here as "kingies". It took him for a little ride! We had a delicious supper that night of BBQ kingie steaks and lobster tail (see below). Before the weekend was done we had a chilly bin full of fish, crays, and paua.
